In a bowl, mix together the doenjang, gochujang, minced garlic, sugar, sesame oil, and toasted sesame seeds until well blended.
Taste the mixture and adjust the seasoning as desired. You can add more sugar for sweetness, more gochujang for heat, or a splash of rice vinegar for acidity.
If using, fold in chopped green onions, diced onions, tofu, tuna, or chopped nuts to add texture and complexity.
Transfer the ssamjang to a serving dish. It can be served immediately or stored in an airtight container in the refrigerator for up to a week.
