EASY Brie Cheese and Cherry Tomato Spaghetti

This is a pasta recipe that went viral in South Korea years ago, thanks to a singer named Sung Si Kyung, who also happens to be famous for his simple and easy-to-follow recipes. Brie cheese might not be an ingredient you typically associate with pasta, but it adds a mild creaminess that goes perfectly with all the other ingredients: basil for that sweet and peppery aroma, tomato for that refreshing tang, garlic to add a robust flavor to your olive oil.

Originally, the recipe requires no other cooking than the pasta, which is why it’s so easy to make. But I find that giving everything a quick saute first really brings out the flavor, and frankly doesn’t take up that much more time since you can do it while you wait for the pasta to cook.

  1. Boil the pasta

    In a large pot, bring the water to a boil. Add salt and pasta, then cook according to packaging instructions.

    *Save the pasta water for later!

  1. Prep the ingredients

    While you're waiting for the pasta to boil, cut the brie cheese into small chunks, halve the tomatoes, mince the garlic, and cut the basil into thin strips. You can also do this before boiling the pasta if you want to take your time. :)

  1. Build the flavors

    In a pan over medium heat, saute the minced garlic in olive oil, then give the cherry tomatoes a quick toss to let the flavors bloom. By now, your kitchen should smell amazing!

  1. Add the pasta and mix

    Once the pasta is done cooking, add it to your garlic and tomatoes along with the basil and brie cheese. Turn off the heat, then mix everything together until the cheese is melted, adding a ladle or two of pasta water if the sauce is too thick. Season with salt and pepper as needed.

  1. Serve

    Top with some extra basil leaves if you have any, then serve and enjoy!
