Simple Egg Sandwich (Tamago Sando)

This EASY egg salad sandwich is perfect for those days when you just want to get a quick meal out of the way. It is inspired by the Japanese tamago sando, but instead of looking for a specific milk bread, I say use whatever sandwich bread you want! I do recommend Kewpie mayo, though, because it tastes significantly better (in my opinion) than American mayonnaise.

Make a huge batch and store it in the fridge, then whip up a sandwich whenever you need in just a minute or two!

Instructions

  1. Boil the eggs for 9 minutes, then give them an ice bath to make them easier to peel.

    Make sure the eggs are first brought to room temperature.
  1. Mash the eggs with a fork.

  1. Mix in the mayonnaise and mustard. Add more to taste.

  1. Season with salt and pepper or whatever you like.

  1. Spread the egg salad on your bread to complete the sandwich.

Note

You can add more ingredients to the egg to make it more filling! Some popular options are canned sweet corn, cucumber slices, and shredded imitation crab. This is just the simplest version. ;)
