Bibimguksu (Spicy Korean Noodles)
This sweet and spicy noodle dish is a favorite among Koreans during the summertime! It requires minimal cooking (you only need to boil the noodles), which makes it almost as easy to make as instant ramen.

Ingredients
100g somyeon noodles*
1/2 cucumber, julienned
2 hard boiled eggs
1 tbsp gochujang
1 tsp gochugaru
1 tbsp soy sauce
1 tbsp sesame oil
1 tbsp sugar
1 tbsp apple cider vinegar
Green onion and sesame seeds (for optional garnish)
*Also known as Japanese somen, these are thin wheat noodles. If you don’t have access to Asian noodles, try angel hair pasta or any kind of thin equivalent.
Instructions
Boil the noodles according to package instructions. Rinse with cold water and drain.
To make the sauce, mix gochujang, gochugaru, soy sauce, sesame oil, sugar, and apple cider vinegar. Omit the gochugaru to make it less spicy.
Plate the noodles and pour over the sauce, then add your cucumber and eggs to the plate. Start with about half the sauce at first and add more according to taste.
Garnish with sesame seeds and green onion.
Mix the sauce thoroughly into the noodles before eating.
